Our Journey


In the sun-drenched hills of Nuevo Refugio, Mexico, brothers Noe and Sabas Gallardo began

their journey on a modest ranch, tending to golden corn, spiky agave, and a herd of sturdy cows.

From dawn to dusk, they learned the value of hard work, nurturing their small plot of land with

dreams that stretched far beyond the horizon.


With courage and determination, they ventured to Texas, starting as dishwashers in bustling

restaurant kitchens. Scrubbing pots and washing plates, they soaked up the vibrant flavors of

Tex-Mex cuisine, turning every shift into a stepping stone. Through relentless dedication, late

nights, and unyielding ambition, Noe and Sabas rose through the ranks, transforming their

passion into a thriving entrepreneurial journey.


Today, their legacy shines at Margarita Jones, a restaurant designed to bring a piece of their

Nuevo Refugio home to every guest. Noe and Sabas remain deeply involved, working daily in

their stores to ensure every visitor feels welcomed and well cared for. With immense gratitude

for the opportunities Texas provided, they pour their hearts into giving back, proudly supporting

the communities that surround their restaurants.
